Granny's Pound Cake
7 whole eggs, at room temperature
3 sticks butter, at room temperature
3 cups sugar
1 1/2 cups self-rising flour
1 1/2 cups all-purpose flour
1 cup buttermilk
1 pinch baking soda
2 teaspoons lemon extract
Sift dry ingredients together. In another bowl, cream butter and sugar until light and fluffy. Separate eggs and beat the whites until stiff. Set aside. Gradually add dry ingredients to the butter and sugar mixture, alternating with the egg whites. Mix well. Add the buttermilk, egg yolks, and flavoring and again mix thoroughly. Pour into a greased tube pan and bake at 350 degrees for about an hour, or until cake is done.
