Cream of Broccoli Soup

I have no idea where this recipe came from, but it's good -- if you like Broccoli!

Ingredients:
1 shallot, minced
1/2 cup chopped carrots
1 tablespoon olive oil
1 can chicken stock
1 medium potato, in 1/2 inch cubes
1/4 teaspoon salt, grind of black pepper

8 ounces frozen broccoli, microwaved 2 minutes
1/2 - 1 cup water
2 tablespoons butter
1/4 cup heavy cream

Directions:
Saute shallot and carrots in olive oil for 3-4 minutes. Add chicken stock and potato. Cook for 10-minutes or so, until the potatoes and carrots are cooked. Add 1/2 cup water, or more to cover. Add cooked broccoli and simmer for 5 minutes. Add butter and cream.

Use immersion blender and blend until smooth.

Add water as needed to adjust consistency.

Add salt and pepper as needed.
