Chocolate Marble Cheesecake

This recipe is adapted from Oster Kitchen Center Cookbook late 1970s -- a wedding present!
It is very reliable, and tasty New York-style Cheesecake!
If you want a great "regular cheesecake" just leave out the chocolate and add 1 tablespoon lemon juice.

Crust Ingredients:
1 package Graham Cracker Cookies
3 tablespoons melted butter
1/8th teaspoon cinnamon

Ingredients:
2 8-ounce packages cream cheese, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
2 eggs, separated
2 ounces semisweet chocolate, melted

Directions:
Grind cookies in a processor to form crumbs. Mix crumbs, cinnamon and butter and then press into bottom of 9 1/2 inch springform pan. Refrigerate until ready to use.

Position rack in center of oven.

Preheat oven to 300°F .

Use electric mixer and beat cream cheese with sugar. Add egg yolks and blend just to combine. Whip egg whites until stiff. Fold cream cheese mixture into egg whites.

Transfer 1 cup of batter into another bowl and mix in the melted chocolate. Pour remaining plain batter into crust. Pour chocolate batter into the crust. Using a spatula, swirl chocolate into plain batter.

Bake until center of cake is almost set, about 1 1/2 hours. Turn oven off. Let choose cake remain in oven with door closed until firm and completely cool, about 1 1/2 hours. Refrigerate overnight.

Serves 6-8.
