Cilantro Pesto

I can't remember where this recipe comes from -- or even if it's the one I really like, but it looks close! But, since the Spicy peanut Sauce recipe suggests using Cilantro Pesto as a compliment, I felt I should post this as well.

Ingredients:
2 cups cilantro leaves washed and firmly packed
2 garlic cloves
2 tablespoons pumpkin seeds
2 tablespoons fresh lime juice
2-3 tablespoons grated Parmesan cheese
2 teaspoons salt
1 teaspoon freshly ground black pepper
5 tablespoons olive oil

 

Directions:
In a food processor, combine the cilantro, garlic pumpkin seeds, lime juice, Parmesan cheese, salt and pepper. With the motor running, slowly add olive oil until the sauce is emulsified. The sauce may be prepared up to 2 days ahead, covered and refrigerated. Bring to room temperature 1 hour before serving.

Makes 1 cup.
