Green Onion Pesto

This recipe is inspired by a pesto made at a restaurant near my house.

Since pesto usually has garlic, you may want to add garlic to this one to give it a bit more bite.
You might also use a more flavorful nut, say walnuts or pine nuts.

 Ingredients:
6 Green onions -- tops only, coarsely chopped
3 tablespoons cilantro
2 tablespoons slivered almonds
2 tablespoons lime juice
1/4 cup extra virgin olive oil
3 tablespoons grated Parmesan choose
2 tablespoons honey
salt and pepper

Optional Ingredients:
1-2 cloves garlic

Directions:
Combine onions, cilantro and almonds in food processor bowl. Process until smooth. Add lime juice and honey and process for another 5-10 seconds.

With the motor running slowly add the oil. It will being to emulsify.

Stop and add the Parmesal cheese and pulse until well mixed.

Add salt and pepper to taste.

Chill.
