Orange Spirals

Ingredients:
900g plain white flour
large pinch of salt
3 tsp baking powder
170g butter, cubed
55g sugar
1 orange, zest grated
3 eggs
400ml milk

Orange Butter
170g butter, softened
2 large oranges, zest finely grated
200g powdered sugar

Glaze
eggwash (1 egg whisked with a pinch of salt)
granulated sugar

 

 

Directions:
Preheat oven to 450°F.

First make the orange butter.
Cream the butter with the orange zest. Sift in the icing sugar and beat until fluffy.

 

Sieve the flour, salt and baking powder into a large, wide bowl.
Add the butter and rub in lightly, using your thumb and fingertips, until the mix resembles coarse crumbs.
Add the sugar and orange zest. Make a well in the center.

Whisk the eggs with the milk, add to the dry ingredients and mix to a soft dough.
Turn out the dough onto a floured surface. Lightly shape into a rectangle and roll out to about 2 cm thick.

Spread the soft orange butter over the surface. Roll up lengthwise and cut into slices about 3 cm thick.

Put cut side up on a baking sheet. Brush the tops with eggwash and dip in granulated sugar.

Bake for 10-15 minutes or until golden brown on top.

Serve when still slightly warm.
