Spicy Peanut Sauce
I think I found this in a Fannie
Farmer cookbook. Try it as a dipping sauce for
spring rolls, or on pasta with chicken, green
onions and red peppers. One of our favorite
restaurants, 29 East Main in Los
Gatos, CA makes a Thai
Chicken Pizza using a sauce that's very similiar.
Spread a thin layer on top of the pizza crust, then
top with chunks of grilled hicken, red peppers,
green onions, sesame seeds and cilantro pesto.

Ingredients:
5 ounces
chunky peanut butter
2 tablespoons soy sauce
1/3 cup water
3 tablespoons sugar
1 tablespoon sesame oil
1 1/2 tablespoons rice vinegar
6 cloves garlic, minced
1/2 cup cilantro, chopped
4 teaspoons hot chile oil
Directions:
Beat together ingredients with electric mixer - do not over
mix or it may distort the texture. Store in a covered
container in refrigerator. Will keep for weeks.
Makes 1
cup.
