Tamari Sesame Glaze

This recipe comes from the chef at Country Gourmet, a restaurant near our house. Jimmy uses this over grilled tuna -- just a tablespoon or two per serving.

Since you will be reducing ingredients with very strong odors, it is important to do this under a good range hood.

  Ingredients:
3/4 cup rice wine vinegar
1/4 cup sugar
1/2 teaspoon finely grated ginger

 

1/2 teaspoon sesame oil
3/4 cup tamari or soy sauce
1/2 tablespoon brown sugar
Juice from 1/2 of lime

 

Directions:
Mix sugar, rice wine vinegar and ginger in saucepan. Reduce over medium heat until it is almost a syrup consistency.

Remove from heat. Add remaining ingredients.

Simmer to desired consistency.

If the desire thickness is not occurring, combine 1 tablespoon of cold water and 1 tablespoon of corn starch together. Then add to the glaze and slowly simmer to desired thickness.

 

Total cooking time, approx 1 hour.
