- 1 1/2 cups water
- 2 cups milk
- 1 1/2 cups cornmeal (stoneground is best)
- 1 1/4 tsp salt
- 1 1/2 tsp sugar
- 2 tblsp butter
- 5 eggs
- 1 tblsp baking powder
Preheat oven to 350 degrees. Grease a large shallow baking dish.
Combine the water and milk and heat to simmer. Add the cornmeal,
salt, sugar, and butter, and stir over medium heat until the mixture
is thickened, about 5 minutes. Remove from the heat. Beat the eggs
with the baking powder until they are very light and fluffy, then add
them to the cornmeal mixture. Mix well. Pour into the prepared dish
and bake for 45 to 50 minutes. Serve hot.

pretested except by the experience of the submitter. It has been
served at one time or another at one of our Reston Garden Club events
