Scones

  • 2 cups sifted all purpose flour
  • 2 ½ teaspoons double-acting baking powder
  • 1 Tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup margarine or butter
  • 2 eggs
  • 1/3 cup plain yogurt (or could substitute strawberry yogurt)
  • ½ cup chocolate chips (or could substitute raisins)

Sift flour, baking powder, sugar and salt into a mixing bowl. Add margarine. Work it into flour mixture by criss-crossing two knives scissor-fashion. In a separate bowl, beat two eggs and add the yogurt. Pour the egg and yogurt mixture into the flour mixture and combine. Add chocolate chips or raisins. I found the dough to be sticky so I just dropped it on a lightly sprayed baking pan instead of forming neat circles. Bake 375 for 12 minutes.
