Apple Cake

  • 2 cups flour
  • 1 cup sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup chopped walnuts or pecans
  • 1 teaspoon vanilla
  • 3 eggs, whipped
  • ¾ cup vegetable or corn oil
  • 5 apples, skinned and sliced

In a large bowl stir together the flour, sugar, baking powder, baking soda, cinnamon and salt. Add the skinned and sliced apples to the dry mixture, stir. In a separate bowl, whip the eggs, then add vanilla, and oil. Pour all at once into the flour/apple mixture. Stir until well blended. Add the chopped nuts and blend. Bake 350° for 35 minutes in a lightly greased 13” x 9” baking pan, or until golden brown and a toothpick comes out clean.
