Peach Cobbler

PEACHES:

  • 5 cups peeled, sliced peaches (about 8 large peaches)
  • 3/4 cup sugar
  • 2 teaspoons flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
BATTER:
  • 3/4 cup flour
  • 3/4 cup sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter or margarine
  • 1 egg, slightly beaten

Preheat oven to 375 degrees F. Prepare peaches in a bowl by combining peaches, sugar, flour, cinnamon, salt and vanilla. Spoon into a 9 x 9 x 2 inch baking dish or a 2-quart oven proof bowl.

Prepare batter in a bowl by combining flour, sugar, baking powder, salt, butter and egg; beat with a wooden spoon until smooth. Drop batter in portions, spacing evenly over peaches. Batter will spread during baking. Bake for 40 minutes, or until golden brown. Serve warm.
