Back to the Recipe IndexImpossible Coconut PieMakes 2 - 9" piesThis is the original recipe. You can freeze it for up to 6 months. Make extra when eggs are plentiful. Beat 4 eggs thoroughly. Mix together 1 and 3/4 cups sugar, 1/2 cup flour and (optional) a touch of nutmeg and cinnamon. Add to eggs with 2 cups of milk, 1 tspn vanilla, 1/8 tspn salt and 1/4 cup melted oleo/butter. Stir in 7 oz Angel Flake coconut. Pour into 2 greased 9" pie plates or a greased 2 and 1/2 quart flat baking dish. Bake at 350F (325F for glass) 30 to 40 minutes or until set. |
