~ a bar cookie from the CAI (Culinary Arts Institute)

For two 10" X 15" X 1" jelly roll pans.

Mix well; 3 cups cake flour; 3 cups sugar; 7 & 1/2 cups quick oats; 3/4 teaspoon salt; and 3 cups shortening, margarine or butter.

Press half into pans, with a bit of an edge. Spread on raspberry jam, mincemeat, or any favorite filling. Sprinkle remaining crumbs on top evenly.

Bake at 350F for 30 to 45 minutes. If the filling is thick, it will take longer. The center should be firm. Cut cool, than remove from the pan.

A 2 pound jar of raspberry preserves fills two jelly roll pans nicely.
