Lemon Sauce

About one cup ~ Betty Crocker Desserts Cookbook

Mix 1/2 cup sugar and 1 tblspn. cornstarch in a small sauce pan. Stir in 1 cup water.

Cook over medium heat, stirring, until mixture thickens and boils. Boil and stir 1 minute.

Remove from heat and stir in 1 tblspn. butter, 1 tblspn. grated lemon peel and 1 tblspn. lemon juice.

Serve warm or cool.

For Cinnamon Sauce (we always preferred this):

Stir 1 or 2 teaspns? cinnamon into the sugar and cornstarch, and a touch of nutmeg, optional.

Now it may be cooked in the microwave, with less stirring and no danger of scorching.

Keep warm in a double boiler or reheat in microwave.

I once made this without sugar by using frozen apple juice concentrate for the liquid, if too rich could be watered down.
