Chop up 2C of carrots, about 1-2" chunks. Measure out 1 cup of lentils and check them for tiny rocks, etc. and wash them. In a pot, put a few Tablespoons of oil and saute a bit of onion and maybe garlic; to taste.Add the lentils and vegetables and 3 cups of water with 1 teaspoonful of salt and any other seasonings you like. Cook at a simmer for an hour or so, until the lentils and vegetables are soft. Do not drain. Take them off the heat and mash them with a potato masher. If you have some nut butter, or sunflower seed butter, on hand, add a big dollop. Stir in 1 and 1/2 cups of raw quick oats really well and leave the mess, covered, to cool to room temperature. Take 6 fresh eggs and break them into your mixer bowl. If you don't have a big strong mixer, you may have to finish mixing with your hands. Start the beaters and when the eggs are mixed, start adding the vegetable mixture by spoonsful. Now doesn't that look almost like hamburger? At first I stood and fried them, a half a cup at a time, in a little oil in a non-stick pan, one at a time; about 10 minutes, turn, and 5 minutes. Boring and time consuming, this makes about 12. Last time I spread them, by the half cupful on some Release foil in a jellyroll pan. Baked them at 350ºF and turned them over once they were set; about 15 minutes, then ten minutes. They stuck!! Next time, I am going to oil the Release foil.They freeze well and defrost quickly in the microwave. They taste good with sour cream on top, but I have to add a little salt. If you will be adding catsup or other salty things they should be just right. Eggless LOV PattiesI used 3 cups of water and a bit more carrots and celery. I added about 6 Tablespoons of Lecithin when it had cooled off a bit. Put them on the oiled foil and baked at 350º F for 15 minutes, flipped and 15 minutes more. |
