Luscious Lemon Bars

This came out as a mix a while back.
The similar recipes are for smaller amounts and I hardly have leftovers anyway.

For a 10" X 15" X 1" jelly roll pan.

Crust: 1 & 1/4 cups margarine or butter
dash of salt
10 tablespoons powdered sugar (5/8 cup)
2 & 1/2 cups flour.

Mix and press into the bottom and slightly up the sides of the pan about 1/2". Bake at 350F for about 20 minutes. Cool.

Beat together; 2 & 1/2 cups sugar; 5 tablespoons flour; 7 & 1/2 tablespoons lemon juice; and 5 eggs. Pour over the crust and bake about 25 minutes more. Just until there is no imprint when touched in the center.

Cool and cut. I found that cutting 6 X 8 bars gives lots of edges for the family and lots of centers for freezing until there is an assortment when company comes.
