Ohio Pudding ~ another classic

Plum Pudding without suet. Good for people who can't have eggs or milk.

1 cup sugar
1 cup flour
2 tsps baking powder
1 tsp salt
1 tsp baking soda
1 cup currants
1 cup raisins
1 cup finely grated raw potato
1 cup finely grated raw carrot.

You'll need a 2 qt. mold or a bundt pan, unless you'd rather make two smaller ones. Butter the inside very well. Mix the dry ingredients together, add the fruits and vegetables and mix thoroughly. You may need to use your hands; this is the hard part. Put into the mold and cover. Steam for about 3 hours. Alternately; cover the bundt pan with buttered waxed paper and then foil. Bake at 300F about 1 & 1/2 hours. Remove and cool for 10 minutes before unmolding. Make ahead and reheat. Good with hard sauce or cinnamon sauce or lemon sauce.
