Salmon loaf or patties

If you are canning your own salmon, scald the fish and pull off the skin. Do not wash afterward, just pick off any scales that may have migrated. I got tired of picking the skin out of quarts of salmon. You must use a pressure cooker.

Salmon 1# tin or 1 pint 2# or a quart
liquid and milk 3/4 cup 1 1/2 cups
eggs 1 whole or two whites 2
cubed bread 4 slices 8 slices
lemon juice 2 teasps. 4 teasps.
chopped onion 1 teasp. 2 teasps.
salt 1/4 teasp. 1/2 teasp.

Drain the salmon and save the liquid.Add all other ingredients and mix well, clean hands work best.

Bake the loaf at 350F about 45 minutes. Or form patties and fry in a small amount of oil.
