Sweet Pickle Relish

 

Ingredients:

4 cups ground, unpeeled cucumbers (about 4)
1 cup ground green bell pepper (about 2)
1/2 cup ground red bell pepper (about 1)
3 cups finely diced celery
1/4 cup salt
3 1/2 cups sugar
2 cups white vinegar
1 tablespoon celery seed
1 tablespoon mustard seed

Directions:

  1. Grind vegetables in food (meat) grinder using the coarsest blade.
  2. Combine all vegetables in a large bowl; sprinkle with salt and cover with cold water. Let stand 4 hours. Drain thoroughly in a colander, then press out all liquid.
  3. Combine sugar, vinegar, celery seed and mustard seed in large saucepan. Bring to a boil, stirring until sugar is dissolved. Stir in drained vegetables. Simmer for 10 minutes.
  4. Immediately pack into clean, hot jars, leaving 1/2-inch of head space; seal.
  5. Process in a boiling water bath for about 10 minutes.

Yield: A generous 3 pints.
