Lumpia

Below is the much requested Lumpia recipe . Many thanks to Wicked Wanda of the Magic Carpet BBS, and to Rainman of Rainman's Sporadic BBS, for turning me on to this wonderful treat. Banana Catsup can be found in Asian markets.

Ingredients

• 2 lbs. ground beef
• 6 carrots, shredded
• 1 large onion, diced small
• 4 stalks celery w/ tops, diced small
• 8 eggs (two separated)
• 1/4 lb. (american) cheese
• 2 jars (11oz.) banana catsup/sauce
• 4 tablespoons of vinegar
• 4 tablespoons sugar
• 2 to 4 packages (24 sheets) lumpia wraps (spring roll wraps will work)
• cooking oil

Brown ground meat, drain well. Add 6 whole eggs and 2 yolks, stir 'til eggs are cooked. Add cheese slowly 'til melted, stirring constantly, then remove from heat, and add the vegetables.

Pull apart the wraps. Place one to two tablespoons of mixture onto wrap 1/3 from end, and roll half way, like a cigar. Fold in ends, and brush a little egg white on the other end, to seal the roll . Continue until all wraps are rolled. Now you can freeze what you will not need at this sitting.

Deep fry 'til golden brown.

Pour banana catsup/sauce into a saucepan. Add vinegar and sugar and heat to very warm, pour into serving cups for dipping, and enjoy.
