Birthday Cake Ideas

Also, there are some store brand cake mixes that are dairy-free. You can use these store bought brands or make your own homemade cake and/or frosting.

    I have heard some parents say that they have had success asking local bakeries to use dairy-free cake mixes and frostings to make a birthday cake for their child. If you are not up for making a cake, or want a specially decorated one - try asking a local bakery if they can do this for you. Bring your cake mix and frosting to the bakery.

    For birthday cakes, I frequently a dairy-free boxed cake mix for the cake and make my own frosting (see recipe below) to decorate it.
 
 

You can use the following  recipe to make the white frosting shown in the cakes above:

    Cake Frosting - Buttercream icing - but no butter!

    1 lb. sifted confectioners sugar (approx. 4 cups)
    4 Tbsp. water (note: use slightly less water for stiffer frosting)
    1 cup solid vegetable shortening (crisco)
    1 tsp. vanilla extract
    1 Tbsp. Wilton Meringue powder (optional)

    Sift the confectioners sugar and meringue powder into a large mixing bowl, set aside. Cream the shortening, vanilla and water. Gradually add the sifted dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so until icing is creamy.
(Note: you can also use artificial butter flavor (1 tsp.) to add more flavor to this icing.)

Ideas: * To make the construction cake -  wash some toy trucks and put them on the cake then use cinnamon and brown sugar for the dirt.
            * Use food coloring or Wilton icing colors to add color to your frosting.
            * You can also make things easier buy buying dairy-free cake decorations at your local supermarket
            * For the truck/balloon cake: I bought "truck candles" and "plastic balloon" decorations at a local craft store.

“Special Forces/Army” theme cake:

To make the icing for this cake you need only one container of dairy-free vanilla frosting. You can, of course, make your own frosting as well. Separate the icing into thirds. Then use regular food coloring or Wilton icing colors to make three different colors. For this cake I used light green, dark green and brown. I literally dropped big spoonfuls of icing around the cake and then carefully spread out to make a camouflage effect. Then my son and I added army men to the top. It is very easy to make and went well with my son’s “special forces” theme.

 

Superhero cake

For this batman cake, I only needed 3 different colors for the design: blue, black and gray.  I drew a batman imagine on the cake and filled it in with icing. I also added “sugar bats” which I was able to find at a local food store.
