Cheese Substitutes

     Recipe for American Cheese. From Janet Davis - Thank you Janet!
            (Janet says you can find most of these ingredients at farmer's markets or health food stores.  It's great over broccoli.)

    2 1/4 cups boiling water
    1/3 cup gelatin powder, unsweetened, "Emes"
    1 cup cashews, raw, cleaned
    4 oz. pimientos (questionable, I omit these)
    3 Tablespoons nutritional yeast flakes
    2 Tablespoons lemon juice
    1 Tablespoons salt
    2 teaspoons onion powder
    1 teaspoon paprika
    1/4 teaspoon garlic powder

    Dissolve Emes gelatin in boiling water.  Blend cashews with about half of the water and Emes until very smooth.  Combine all ingredients
    and continue blending until very smooth.  Pour into a container and refrigerate.

    Can be sliced when firm.  For grating, freeze first, then grate while still partially frozen.  Melts when heated.

    Ricotta-Style Filling for Lasagna   - Thank you Barb Bense!
    (used in place of ricotta or cottage cheese)
    This is excellent and you will NOT be able to taste the difference.

    In a food processor, combine the following ingredients to a fine grainy
    texture like ricotta cheese:
    1 ½ lbs. Firm tofu
    ¼ c. lemon juice
    2 tsp. dried basil or 2 Tblsp. Fresh chopped bsil
    2 tsp. honey
    1 tsp. salt
    1 clove garlic or ½ tsp. garlic powder
