Banana Oatmeal Muffins

    1 1/3 cups flour
    3/4 Cup Quaker Oats
    1/3 Cup sugar
    2 tsp baking powder
    1 beaten egg
    1/2 cup Rice Dream or other milk substitute (Can also use calcium fortified O.J.,  if you allow it)
    3/4 cup mashed bananas
    1/4 cup oil
    1/4 tsp salt

    Combine flour, oats, sugar, baking powder, and salt in a large bowl. Combine egg, Rice Dream, oil and bananas in another bowl. Add the banana mixture to the flour mixture. Stir until moistened. Lightly grease muffin cups and fill till about 2/3 full. Bake in 400F oven for about 20 minutes or until golden brown. Makes about 12 muffins.
 

Blueberry Muffins - Thank you Barb Bense!
    (for those who allow blueberries)

½ c. or 1 stick margarine, softened
1 c. sugar
1 tsp. vanilla
2 eggs
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 c. buttermilk (1 c. soy or rice milk with 1 Tblsp. Lemon juice)
1 c. blueberries

Cream margarine and vanilla, add sugar gradually.  Add unbeaten eggs, and
beat until mixture is light and fluffy.  Add the sifted dry ingredients,
alternating with the buttermilk.  Fold in slightly floured berries.  Bake at
350° for 30 minutes.
 

Peach Poppy Seed Muffins - Thank you Barb Bense!

1 jar peach baby food (jr. size)
1 tsp. baking soda
½ c. or 1 stick margarine, softened
1 c. sugar
½ tsp. vanilla
2 eggs
1 ¾ c. flour
¼ tsp. salt
3 Tblsp. Poppy seeds (I usually only put in about 1 ½ Tblsp.)

Stir baking soda into peach baby food and let it foam.  Cream butter with
sugar, add vanilla flavoring.  When mixture is smooth, add the eggs one at a
time.  Alternately add the flour with the dry ingredients and the peach baby
food mixture.  Then add the Poppy seeds.  Bake at 350° for 30 minutes.

Banana Poppy Seed Muffins - Thank you Barb Bense!

Mix together
        1 egg
        ¼ c. vegetable oil
        ½ c. sugar

Add:
        ½ c. milk
        2 ½ tsp. poppy seed
        2 ripe bananas

Sift:
        1 ½ c. flour
        2 tsp. baking powder
        ½ tsp. salt
        ¼ tsp. soda

Add flour mixture all at one time until just moistened.  Bake for 20 minutes
at 400°.  Makes 12 muffins.
 

Chocolate Marble Muffins
            (note: contains Orange Juice)

    2 cups flour
    1/2 cup sugar
    3 tsp. baking powder
    1 tsp. salt
    3/4 cup almonds,chopped
    1 egg
    3/4 cup orange juice
    1/3 cup vegetable oil
    1/4 cup cocoa powder
    1 tsp. grated range peel

    Combine flour, sugar, baking powder, and salt. Stir in chopped almonds, reserving some for garnish. Combine egg, orange juice and oil. Stir into dry ingredients until mixed. Remove half of the batter, stir in cocoa, and set aside. To remaining batter, stir in orange peel. Place paper liners in standard-sized 12-muffin pan. Holding pan tipped slightly to side, spoon orange batter into one side of each muffin liner. Fill other side of liners with chocolate batter. Sprinkle with reserved almonds. Bake at 400F for 20 minutes. Makes 12.
