This is a list of businesses that carry some wonderful products mentioned (or not) in this book. To buy "pre-packedged" spices is such a rip-off it's ridiculous. To buy a jar in a grocery store, costs about $2.95-$3.95; the same bottle would cost about $1.00 to fill in a "health" food store.

MEATS

Hands down, the best bacon you'll ever have. Wonderful deep smokey flavor, with hardly any fat rendered during cooking. Their smoked hocks are also top notch, turning a simple pot of beans into a treasure. The beef jerky (for which they are known)is also the best I have had.

SPICES, HERBS, and CHILES

Smallish selection of chiles, but of the highest quality. I consider their Dixon chile to be a great all-around chile. Good source for Nambe and Chimayo chiles. They sell ristras (chile "strands"), too.

These people have a huge selection of ground and whole chiles, along with various spices and rubs. Pretty good "gifty" items also (hot sauces, cookbooks, etc.).

This operation is top flight, from their courteous, prompt help, to their wonderful herbs and spices; trust them with your orders, you won't be surprised. I've been dealing with them for years - they're good.
