Avocado Tomato Sauce

with Cilantro

 

My wife and I were introduced to this pasta through friends, so we refer to it as Chris and Mary's Pasta, but I figure you don't know them, so I gave it this name. This sauce is best made in the peak of tomato season to take advantage of their full flavor , and is as good cold as it is warm.

 

 

1    large avocado

1    lemon

   1/4 t  cayenne powder
1    lg. tomato chopped

   1/3    bunch cilantro chopped
3 T  olive oil

 

 

Cut avocado into chunks and put in bowl, sprinkle with lemon juice and red pepper powder; set aside. In another bowl combine chopped tomato and cilantro. Let these sit for 15 minutes, then combine with hot pasta (penne, e.g.), and drizzle with olive oil. Toss gently, but thoroughly, and serve either hot or cold.
