Morris Family Chile Relleno

My wife isn't the cook of the family, yet every time we have a Hispanic influenced meal she is the one in charge of this dish that I've grown so fond of. And still with my confidence in cooking I defer to her judgment on this one. (Even now I asked her for the procedure)

 

     Preheat oven to 350


1    lg. can green chiles

   1/2 #  cheddar cheese
 1 1/2 c  milk
4    eggs

   1/2 c  milk
1 t  salt


 

Hand shred chiles into 1 inch wide sections and slice cheese 1/4 inch thick. Layer chiles and cheese into a well greased 8 in. round baking dish. In a mixing bowl, whisk together the eggs, milk and salt. When combined, gradually whisk in flour and pour into baking dish over the chiles and cheese. Put into heated oven for 45 min. and remove GENTLY as possible to cool for 10-15 minutes.
