Country-Style Sausage

 

I devised this recipe after realizing that finding consistantly good, pre-made country sausage, is almost impossible to find in the urban enviroment; it is either too bland, or too salty. I think you'll like the seasoning balance

 

1 # pork, coarsely ground

1/4 t thyme, dried

1/2 t sage, dried, rubbed

1/2 t black pepper, ground

1 1/2 t salt

1/2 t sugar

dash of allspice

dash of cayenne

1/8 t nutmeg, freshly grated

 

Combine all ingredients well, and try to wait a day before eating, the flavors will be more blended.
