It still wouldn't surprise me if that was Bela Lugosi, or, Bela Bartok's real name. Another one of my old time family favorites.

With the combination of onion, potato, and sour cream, its origin lies in Eastern Europe; and it's always fun to step into someone else's culture. With today's lighter living the substitutions make it possible to make this very low-cal; but first, try it the way it was intended.

 

1 sm. onion chopped

1 1/2 T butter

1 1/2 T flour

1/2 c beef or chicken broth

3/4 c sour cream (or non-fat sour cream or yogurt)

2 t Worcestershire sauce

1/2 t Tabasco sauce

3 med. Russet potatoes (or equivalent in any other type)

cooked, halved and sliced a 1/4 in. thick

2 c ham, cut into short strips (or turkey ham)

2-3 dill pickles, thinly sliced

1/2 c grated Parmesan cheese

 

Simmer onions in a large skillet butter until soft, then add flour to make a roux. Add broth, stirring well, take off heat and add sour cream, DO NOT BOIL. Stir in cooled potatoes, ham, and pickles. Put in greased, shallow casserole, sprinkle with Parmesan, and bake until lightly browned, about 35-40 minutes.
