Marinated Mushrooms

 

 

Yeah, these are nothing unusual, but boy, are they easy to assemble, and they are great to have as part of an antipasto plate, Or, for an added taste, try them lightly grilled. Use this recipe as a guideline and let your imagination and tastebuds go.

 

 

1 # mushrooms, button or crimini, washed and dried

3 T lemon juice

1 T white wine vinegar

3 T onion, finely minced

3 cloves garlic, finely minced

1 T parsley, minced

1 T dried oregano, try the Greek type

(or 1 T fresh)

5-6 T olive oil

salt and pepper to taste

 

In a non-reactive container combine the lemon juice, vinegar, garlic, onion, parsley, and oregano. Let sit for 10-15 min. then add the oil, and salt and pepper to taste

Put washed mushrooms in pot of boiling water and blanch for about 2 minutes, remove from water and drain well. Combine mushrooms, while still hot, with the marinade and let it sit for 2-24 hours (if longer than 6 hours, refrigerate).
