Raspberry Vinegar
This vinegar brings a hint of summer throughout the year with its fresh berry flavor. It offers a great counterpoint to grilled, or broiled meats and is a refreshing burst in marinades, particularly those for chicken and pork.
Be sure to filter out all of the solids to wind up with the clearest final product. If you feel decadent, use a good quality white wine vinegar, though it's not necessary; you want the raspberry flavor to be the most dominant.
Put the ingredients in a non-reactive sauce pan, slowly bring to a light boil. Turn off heat, remove from burner, cover and let cool. Pour mixture through a fine mesh strainer into a non-reactive container. Empty strainer and line with a triple layer of cheesecloth. Pour, once again through the strainer into a non-reactive container. Store in a glass container in a cool dark place.
