Alex’s Oriental Noodles

I’ve never measured ingredients except the spaghetti so play around
with the amounts until you’re happy.

2 lbs. thin spaghetti
¼ lb. peanut butter (I use the natural kind that separates.)
Peanut oil as needed
Soy Sauce to taste (couple tablespoons)
2 or 3 tsps. Sambal Oelek (Ground fresh chili paste)
1 or 2 bunches scallions
1 bunch coriander
Sesame oil to taste (about 1 tablespoon)

Break spaghetti into thirds or quarters.
Mix in peanut butter and peanut oil right after noodles are cooked and still hot.
Next add soy sauce and chili paste. Add coriander, scallions, and sesame oil when
it has cooled down some.

You can get Sambal Oelek in most oriental grocery stores. Go easy with
it especially when the jar is first opened since it is very, very hot.
