Joe Abad grew up in Waipahu, Hawaii and learned to cook the dishes of his Filipino heritage while attending grade school. It was "on-the-job training" helping his grandfather and mother with the family's catering business. From them he learned the cuisine of their homeland.

While learning family recipes, Joe also acquired experience and expertise in the preparation of other ethnic dishes from the kitchens and backyards of neighbors and friends. By the time he was in High School, Joe's skills were such that he was able to prepare a genuine Hawaiian luau for his entire graduating class.

Joe continues to draw from his childhood training and still prepares traditional dishes of the Pacific Rim. Since the early 60’s, he has been cooking for small parties, backyard luaus, wedding receptions and fund raising events here on the West Coast.

Joe is an avid culinary researcher, constantly searching for recipes, old and new. He enjoys creating new dishes, blending culturally authentic cuisines with contemporary ingredients and techniques. It is very apparent that Joe's customers enjoy the results of his diverse culinary background as evidenced by a steady growth in the demand for his services. What started out as a hobby is developing into a full-time business.

For Joe, the traditional and the contemporary are tightly intertwined. The traditional cooking styles, combined with the contemporary culinary influences of modern day Hawaiian cuisine, bring pleasure to the palate and nourishment to the soul. From this cultural exchange emanates Joe's enthusiasm for discovering new recipes and sharing them with friends.
