Pizza Crust - Foccacia-like texture

PIZZA CRUST

Makes 2 - 13” crusts Buy inexpensive, non-stick, high-quality pizza pans from from Target

Dry ingredients
1 cup of Garbanzo bean/Fava bean flour mix (Bob's Red Mill or Garfava)
1 cup of brown rice flour
1 cup of tapioca flour (reduce by 3 Tablespoons and add 3 Tablespoons of Expandex)
1 tablespoon of Xanthan Gum
½ - 1 teaspoon of salt
1 teaspoon garlic granules
1 teaspoon “Italian Spice Mix*”
2 - 3 tablespoons corn meal in the crust (optional)
1 packet of rapid-rise yeast (Not Fleishman’s)
Corn meal to sprinkle on top of crust to pat smooth

Liquid ingredients
2 tablespoons of honey or sugar (as a dry ingredient)
1 1/2 cup of water at temperature recommended on yeast package
1 1/2tablespoons of olive oil
3 egg whites or 2 whole eggs (If using 2 whole eggs, reduce the water by 2 Tablespoons)
1 teaspoon of cider or rice vinegar

*Italian Spice Mix – use finely ground spices or grind in a mortar and pestle
2 parts oregano
1 part thyme
1 part basil
1 part rosemary
1 part marjoram


Mix all dry ingredients in a medium bowl. Mix all liquid ingredients in mixer bowl. Then add dry mixture to the liquid and mix at high speed for 2 – 3 minutes. Divide dough mixture onto 2 pizza pans. Sprinkle corn meal on top and pat evenly to the edges of the pans or use your fingers which you dip into olive oil and pat the pizza dough. Place pans in warm area and let it rise for 25 to 30 minutes. Then bake in a 350° preheated oven for 10 - 15 minutes. Crust will be very lightly browned. At this time you can freeze the crust and use it at another time.

Whenever you bake the pizza, use either Trader Joe’s pizza sauce or Ragu pizza sauce and place the pizza in the oven at 450° until the cheese is bubbly. Trader Joe’s sauce is a bit mild. You may need to sprinkle the top of your pizza with garlic and Italian spice.
