Oatmeal Surprise Pie


Here is a really decadent dessert that is easy to whip together - a pie that makes its own crust. This started out as a No Crust Coconut Pie recipe from Penzeys (V3, 16 of Penzeys One), but Hallie and coconut are on opposite sides of the solar system. Coconut became gluten free oatmeal with some chopped chocolate added for extra zest. You can double the recipe for a larger dinner party.

Chocolate Oatmeal Surprise Pie
Amount Measure Ingredient
1/2 Stick Butter or margarine (1/4 stick melted)
1 Large Egg
2/3 Cup White sugar
3/4 teaspoon Vanilla extract or brandy or both
1/8 - 1/4 teaspoon Guar or xanthan gum
1/8 - 1/4 teaspoon Ground nutmeg
1/4 cup Gluten free flour
1 cup Milk
1-1/2 cup Gluten free oatmeal flakes
1/4 cup Chopped 70% chocolate dark chocolate bars (You can use chocolate chips, but they won't melt nearly as much.)
1/4 cup Chopped nuts (optional)
