Every year we struggle with soup. Sometimes we just dispense with it. Most years we make potato knaidle and gently place them in the heated broth at serving. This year we decided to forget about trying to do 'matzo' balls. We're just going to make a seder plate soup instead.
We do use chicken broth, but you can use vegetable broth just fine. We usually use a combination home made chicken broth and some canned broth also. This year we'll add:
